Recipe: Sponge Cake of 5 Ingredients

This weekend we cook a sponge cake. You would need very few simple ingredients to make it. The cake is easy and fast to cook. And not much to wash afterwards!

SPONGE CAKE WITH SEASONAL STRAWBERRIES OR WITH APPLES
This weekend we are sharing the easiest sponge cake which you can whip up in seconds. It is ideal if you suddenly have a guest or just want something sweet for yourself.
80g caster sugar or brown sugar
100g plain flour or spelt flour for a healthier version
100 strawberries cut into uniform pieces
This cake is made with strawberries as they are in season but it is very good with apples as well. In this case, core and slice thinly 2 apples.
½ teaspoon of baking soda
Icing sugar to serve (optional)
Start with preheating the oven to 180C. Butter a 16cm cake tin with a removable base. Beat the eggs and sugar until very fluffy. Gently fold in the flour and baking soda. Place the strawberries (apples) at the bottom of the cake tin and pour in the cake batter. Cook for 25-35 minutes or until a skewer inserted into the cake comes out clean. Dust with some icing sugar if you like.
